Ca Say in Tien Yen: What It Is and How to Order

Listen to this page Hands-free overview

Ca say (cà sáy) is a hybrid of a domestic duck and a Muscovy duck, known locally as ngan. It is a poultry specialty associated with Tien Yen in eastern Quang Ninh. The two useful menu names to recognize are cà sáy luộc, simply boiled poultry, and rựa mận cà sáy, a strongly seasoned stew.

Choose the boiled version if you want to taste the meat with dipping sauce on the side. Choose rựa mận if you enjoy galangal and fermented flavors, after checking its ingredients. For a restaurant meal, confirm the dish and portion before traveling: a whole bird can be a substantial shared order, especially for one or two people.

What ca say means on a Vietnamese menu

The name describes the bird, so it does not tell you how your meal will be cooked. It is not goose, and it is different from Tien Yen chicken, another local poultry specialty. Show the Vietnamese spelling cà sáy when ordering to avoid being offered an ordinary duck or chicken dish instead.

You may also see the spelling cả sáy. Although closely associated with Tien Yen, the hybrid is also raised elsewhere in eastern Quang Ninh. Focus on the preparation and the portion you want rather than treating its name as a guarantee of one particular farm or recipe.

How to choose a preparation

Ca say luoc: a simpler first taste

Boiled ca say is usually cut into pieces for sharing. Ginger or salt may be used during cooking, with a separate dipping sauce served alongside. Ask what is in the sauce before mixing it with your food; some accompaniments include cooked poultry blood.

This is the easier starting point if members of your group prefer different levels of seasoning. Request the sauce and chili separately, and expect bone-in pieces rather than a boneless breast portion.

Rua man ca say: galangal and fermented flavors

Rựa mận cà sáy combines the poultry with galangal, fermented rice called mẻ, and fermented shrimp paste called mắm tôm. The result is a savory, aromatic stew. Coconut, taro or sweet potato may also be used, depending on the kitchen.

Some versions contain peanuts and poultry blood cooked into the sauce. These ingredients can be part of the preparation rather than optional toppings, so mention dietary restrictions before ordering. A request to leave off a garnish will not change a sauce that has already been cooked.

Eat the stew hot with rice vermicelli, bread or rice, and ask which accompaniment is included. Order by the full name rựa mận cà sáy: rựa mận describes a cooking style that can be used with other meats.

Grilled dishes and a mixed meal

Ca say can also be grilled or used in stir-fried dishes. If you want to compare preparations, ask whether the kitchen can divide one bird between two dishes. Do this before agreeing to the order; choosing two preparations does not necessarily mean buying two small plates.

For a group, one poultry order with a vegetable dish and a starch may be a more manageable starting point than several meat dishes. Let the restaurant advise on quantity once it knows the number of adults, children and other dishes you plan to order.

Asking Rua Restaurant about a ca say meal

For inquiries about the Tien Yen specialty, contact Rùa Restaurant on 0949 886 866. The restaurant’s address reference is the general hospital gate on Ly Thuong Kiet Street, Tien Yen. Ask for the current map pin when arranging your visit; the regional description “Tien Yen river junction” is not a precise restaurant address.

Before setting out, confirm that the restaurant is serving ca say on your chosen day, whether rựa mận needs advance preparation, and what time your meal can be ready. Agree on the portion and current total price at the same time. If you cannot get a response, arrange another meal stop rather than relying on an unconfirmed booking.

For international dialing, use +84 949 886 866. If ordering in Vietnamese is difficult, ask your accommodation or driver to help explain the dish, group size and dietary requirements.

Portions, prices and useful ordering phrases

Check whether the quoted price is for a plate, half a bird, a whole bird or a weight-based order. For a price per kilogram, ask what is weighed and whether cooking is included. Confirm rice, noodles, vegetables and drinks separately, and check the payment method before arriving.

  • “Hôm nay có cà sáy không?” — Do you have ca say today?
  • “Có bán nửa con không?” — Can we order half a bird?
  • “Cho nước chấm riêng.” — Please serve the dipping sauce separately.
  • “Món này có mắm tôm, lạc hoặc tiết không?” — Does this dish contain shrimp paste, peanuts or blood?
  • “Tổng cộng bao nhiêu tiền?” — What is the total price?

If you have an allergy, explain that it is an allergy rather than simply using the ingredient question above. Ask whether the kitchen can prepare a suitable meal before deciding what to eat.

To add time in town, use the Tien Yen old town and food-walk guide. It combines a daylight walk with local dishes and explains when the Saturday walking-street program makes an overnight stop worthwhile.

Fitting Tien Yen into your journey

Tien Yen is inland in eastern Quang Ninh, away from Halong’s main cruise waterfront. A ca say meal makes more sense as a planned stop while exploring this part of the province or traveling toward Binh Lieu or Mong Cai than as a quick extra around a Halong cruise departure.

Give your driver the restaurant pin and agreed meal time before the journey. Check how the stop fits the actual road route, including any detour into town and waiting time. Keep a simple alternative available if the kitchen cannot prepare the dish within your schedule.

For a first visit, settle three details before arriving: the exact preparation, a suitable portion and the time it will be served. That leaves you free to enjoy the meal without negotiating a whole-bird order at the table.
